Wine  

Wine is an alcoholic beverage made from the fermentation of grape juice. The natural chemical balance of grapes is such that they can ferment without the addition of sugars, acids, enzymes or other nutrients. Wine is produced by fermenting crushed grapes using various types of yeast which consume the sugars found in the grapes and convert them into alcohol. Various varieties of grapes and strains of yeasts are used depending on the types of wine produced.
Although other fruits such as apples and berries can also be fermented, the resultant "wines" are normally named after the fruit from which they are produced (for example, apple wine or elderberry wine) and are generically known as fruit wine or country wine (not to be confused with the French term vin du pays). Others, such as barley wine and rice wine (e.g. sake), are made from starch-based materials and resemble beer and spirit more than wine, while ginger wine is fortified with brandy. In these cases, the use of the term "wine" is a reference to the higher alcohol content, rather than production process. The commercial use of the English word "wine" (and its equivalent in other languages) is protected by law in many jurisdictions.
Wine has a rich history dating back to around 6000 BC and is thought to have originated in areas now within the borders of Israel, Georgia and Iran. Wine probably appeared in Europe at about 4500 BC in what is now Bulgaria and Greece, and was very common in ancient Greece, Thrace and Rome. Wine has also played an important role in religion throughout history. The Greek god Dionysos and the Roman equivalent Bacchus represented wine, and the drink is also used in Christian and Jewish ceremonies such as the Eucharist and Kiddush.
The word "wine" derives from the Proto-Germanic *winam, an early borrowing from the Latin vinum, "wine" or "(grape) vine", itself derived from the Proto-Indo-European stem *win-o- (cf. Ancient Greek οῖνος - oînos, Aeolic Greek ϝοίνος - woinos). Similar words for wine or grapes are found in the Semitic languages (cf. Arabic ﻭﻳﻦ wayn) and in Georgian (ğvino); some consider the term to be a wanderwort, or "wandering word".

History

Archaeological evidence suggests that the earliest production of wine, made by fermenting grapes, took place in sites in Israel, Georgia and Iran, from as early as 6000 BC. These locations are all within the natural area of the European grapevine Vitis vinifera.
A 2003 report by archaeologists indicates a possibility that grapes were used together with rice to produce mixed fermented beverages in China as early as 7000 BC. Pottery jars from the Neolithic site of Jiahu, Henan were found to contain traces of tartaric acid and other organic compounds commonly found in wine. However, other fruits indigenous to the region, such as hawthorn, could not be ruled out. If these beverages, which seem to be the precursors of rice wine, included grapes rather than other fruits, these grapes were of any of the several dozen indigenous wild species of grape in China, rather than from Vitis vinifera, which were introduced into China some 6000 years later.
The oldest known evidence of wine production in Europe is dated to 4500 BC and comes from archaeological sites in Greece. The same sites also contain the world’s earliest evidence of crushed grapes.In Ancient Egypt, six of 36 wine amphoras were found in the tomb of King Tutankhamun bearing the name "Kha'y", a royal chief vintner. Five of these amphoras were designated as from the King's personal estate with the sixth listed as from the estate of the royal house of Aten. Traces of wine have also been found in central Asian Xinjiang, dating from the second and first millennia BC.
In medieval Europe, the Roman Catholic Church was a staunch supporter of wine since it was necessary for the celebration of Mass. In places such as Germany, beer was banned and considered pagan and barbaric, while wine consumption was viewed as civilized and a sign of conversion to Christianity. Monks in France made wine for years, storing it underground in caves to age.
In the Islamic world, wine was forbidden during the Islamic Golden Age. After Geber and other Muslim chemists pioneered the distillation of wine, however, it was legalized for cosmetic and medical uses. In fact, the 10th-century Persian philosopher and scientist Al Biruni described recipes where herbs, minerals and even gemstones are mixed with wine for medicinal purposes. Wine became so revered and its effect so feared that elaborate theories were developed about which gemstones would best counteract its negative side effects.

 Grape varieties

Wine is usually made from one or more varieties of the European species Vitis vinifera, such as Pinot Noir, Chardonnay, Cabernet Sauvignon, and Merlot. When one of these varieties is used as the predominant grape (usually defined by law as a minimum of 75% or 85%), the result is a varietal, as opposed to a blended, wine. Blended wines are not considered inferior to varietal wines; in fact, some of the world's most valued and expensive wines, from regions like Bordeaux and the Rhone Valley, are blended from different grape varieties of the same vintage.
Wine can also be made from other species of grape or from hybrids, created by the genetic crossing of two species. Vitis labrusca (of which the Concord grape is a cultivar), Vitis aestivalis, Vitis rupestris, Vitis rotundifolia and Vitis riparia are native North American grapes usually grown for consumption as fruit or for the production of grape juice, jam, or jelly, but sometimes made into wine.
Hybridization is not to be confused with the practice of grafting. Most of the world's vineyards are planted with European V. vinifera vines that have been grafted onto North American species rootstock. This is common practice because North American grape species are resistant to phylloxera, a root louse that eventually kills the vine. In the late 19th century, Europe's vineyards were devastated by the bug, leading to massive vine deaths and eventual replanting. Grafting is done in every wine-producing country of the world except for the Canary Islands, Chile and Argentina, which are the only ones that have not yet been exposed to the insect.
In the context of wine production, terroir is a concept that encompasses the varieties of grapes used, elevation and shape of the vineyard, type and chemistry of soil, climate and seasonal conditions, and the local yeast cultures. The range of possibilities here can result in great differences between wines, influencing the fermentation, finishing, and aging processes as well. Many wineries use growing and production methods that preserve or accentuate the aroma and taste influences of their unique terroir. However, flavor differences are not desirable for producers of mass-market table wine or other cheaper wines, where consistency is more important. Such producers will try to minimize differences in sources of grapes by using production techniques such as micro-oxygenation, tannin filtration, cross-flow filtration, thin film evaporation, and spinning cones.

Classification

Regulations govern the classification and sale of wine in many regions of the world. European wines tend to be classified by region (e.g. Bordeaux and Chianti), while non-European wines are most often classified by grape (e.g. Pinot Noir and Merlot). More and more, however, market recognition of particular regions is leading to their increased prominence on non-European wine labels. Examples of non-European recognized locales include: Napa Valley in California, Barossa Valley in Australia, Willamette Valley in Oregon, Central Valley in Chile and Marlborough in New Zealand.
Some blended wine names are marketing terms, and the use of these names is governed by trademark or copyright law rather than by specific wine laws. For example, Meritage (sounds like "heritage") is generally a Bordeaux-style blend of Cabernet Sauvignon and Merlot, and may also include Cabernet Franc, Petit Verdot, and Malbec. Commercial use of the term "Meritage" is allowed only via licensing agreements with an organization called the "Meritage Association".

Europe classification

France has an appellation system based on the concept of terroir, with classifications which range from Vin de Table ("table wine") at the bottom, through Vin de Pays and Vin Délimité de Qualité Supérieure (VDQS) up to Appellation d'Origine Contrôlée (AOC). Portugal has something similar and, in fact, pioneered this technique back in 1756 with a royal charter which created the "Demarcated Douro Region" and regulated wine production and trade. Germany did likewise in 2002, although their system has not yet achieved the authority of those of the other countries'. Spain and Italy have classifications which are based on a dual system of region of origin and quality of product.

Outside of Europe

New World wine—wines from outside of the traditional wine growing regions of Europe—tend to be classified by grape rather than by terroir or region of origin, although there have been non-official attempts to classify them by quality.

Vintages

A "vintage wine" is one made from grapes that were all or mostly grown in a single specified year, and labeled as such. (Most countries allow a vintage wine to include a portion of wine that is not from the labeled vintage.) Variations in a wine's character from year to year can include subtle differences in color, palate, nose, body and development. High-quality red table wines can improve in flavor with age if properly stored. Consequently, it is not uncommon for wine enthusiasts and traders to save bottles of an especially good vintage wine for future consumption.
In the United States, for a wine to be vintage dated and labeled with a country of origin or American Viticultural Area (AVA) (such as "Sonoma Valley"), it must contain at least 95% of its volume from grapes harvested in that year. If a wine is not labeled with a country of origin or AVA the percentage requirement is lowered to 85%.
Vintage wines are generally bottled in a single batch so that each bottle will have a similar taste. Climate can have a big impact on the character of a wine to the extent that different vintages from the same vineyard can vary dramatically in flavor and quality. Thus, vintage wines are produced to be individually characteristic of the vintage and to serve as the flagship wines of the producer. Superior vintages, from reputable producers and regions, will often fetch much higher prices than their average vintages. Some vintage wines, like Brunellos, are only made in better-than-average years.
Non-vintage wines can be blended from more than one vintage for consistency, a process which allows wine makers to keep a reliable market image and maintain sales even in bad years. One recent study suggests that for normal drinkers, vintage year may not be as significant to perceived wine quality as currently thought, although wine connoisseurs continue to place great importance on it.

Tasting

Wine tasting is the sensory examination and evaluation of wine. Wines may be classified by their effect on the drinker's palate. They are made up of chemical compounds which are similar or identical to those in fruits, vegetables, and spices. The sweetness of wine is determined by the amount of residual sugar in the wine after fermentation, relative to the acidity present in the wine. Dry wine, for example, has only a small amount of residual sugar. Inexperienced wine drinkers often tend to mistake the taste of ripe fruit for sweetness when, in fact, the wine in question is very dry.
Individual flavors may also be detected, due to the complex mix of organic molecules such as esters and terpenes that grape juice and wine can contain. Tasters often can distinguish between flavors characteristic of a specific grape (e.g., Chianti and sour cherry) and flavors that result from other factors in wine making, either intentional or not. The most typical intentional flavor elements in wine are those that are imparted by aging in oak casks; chocolate, vanilla, or coffee almost always come from the oak and not the grape itself.
Banana flavors (isoamyl acetate) are the product of yeast metabolism, as are spoilage aromas such as sweaty, barnyard, band-aid (4-ethylphenol and 4-ethylguaiacol), and rotten egg (hydrogen sulfide). Some varietals can also have a mineral flavor, because some salts are soluble in water (like limestone), and are absorbed by the wine.
Wine aroma comes from volatile compounds in the wine that are released into the air. Vaporization of these compounds can be sped up by twirling the wine glass or serving the wine at room temperature. For red wines that are already highly aromatic, like Chinon and Beaujolais, many people prefer them chilled.

Collecting

At the highest end, rare, super-premium wines are the most expensive of all food, and outstanding vintages from the best vineyards may sell for thousands of dollars per bottle. Such wines are considered by some to be Veblen goods—that is, goods for which demand increases instead of decreases as its price rises. The most common wines purchased for investment include those from Bordeaux, cult wines from California, and Vintage port. Characteristics of highly collectible wines include:
  1. A proven track record of holding well over time
  2. A drinking window plateau (i.e., the period for maturity and approachability) that is many years long
  3. A consensus amongst experts as to the quality of the wines
Investment in fine wine has attracted fraudsters who prey on their victims' ignorance of this sector of the wine market. Wine fraudsters often work by charging excessively high prices for off-vintage or lower-status wines from famous wine regions, while claiming that they are offering a sound investment unaffected by economic cycles. Like any investment, proper research is essential before investing. Counterfeiting of labels and bottles is another scam that is frequently encountered in auctions of famous wines such as 1982 Pétrus.

Beer  

Beer is the world's oldest and most widely consumed  alcoholic beverage and the third most popular drink overall after water and tea. It is produced by the brewing and fermentation of starches, mainly derived from cereals — the most common of which is malted barley, although wheat, corn, and rice are also widely used. Most beer is flavoured with hops, which add bitterness and act as a natural preservative, though other flavourings such as herbs or fruit may occasionally be included. Alcoholic beverages fermented from non-starch sources such as grape juice (wine) or honey (mead) or distilled after fermentation are not classified as beer.
Some of mankind's earliest known writings refer to the production and distribution of beer: the Code of Hammurabi included laws regulating beer and beer parlours, and The Hymn to Ninkasi, a prayer to the Mesopotamian Goddess of Beer, served as both a prayer and as a method of remembering the recipe for beer in a culture with few literate people. Today, the brewing industry is a huge global business, consisting of several dominant multinational companies and many thousands of smaller producers ranging from brewpubs to regional breweries.
The basics of brewing beer are shared across national and cultural boundaries, and are commonly categorised into two main types — the globally popular pale lagers and the regionally distinct ales which are further categorised into other varieties such as pale ale, stout and brown ale. The strength of beer may range from less than 1% abv (alcohol by volume) to over 20% abv in rare cases, though is usually around 4% to 6% abv.
Beer forms part of the culture of various beer drinking nations, and has acquired various social traditions and associations, such as beer festivals and a rich pub culture involving activities such as pub crawling or pub games such as bar billiards.

History

Beer is one of the world's oldest beverages, possibly dating back to the 6th millennium BC, and is recorded in the written history of ancient Egypt and Mesopotamia. The earliest Sumerian writings contain references to beer. A prayer to the goddess Ninkasi known as "The Hymn to Ninkasi" serves as both a prayer as well as a method of remembering the recipe for beer in a culture with few literate people.
As almost any substance containing carbohydrates, mainly sugar or starch, can naturally undergo fermentation, it is likely that beer-like beverages were independently invented among various cultures throughout the world. The invention of bread and beer has been argued to be responsible for humanity's ability to develop technology and build civilization. The earliest known chemical evidence of beer dates to circa 3500–3100 BC from the site of Godin Tepe in the Zagros Mountains of western Iran.
Beer was spread through Europe by Germanic and Celtic tribes as far back as 3000 BC, though it was mainly brewed on a domestic scale. Though the product that the early European would have been drinking might not always be recognised as beer by most people today. The early European beers might contain alongside the basic starch source: fruits, honey, numerous types of plants, spices and other substances such as narcotic drugs. What they did not contain was hops, as that was a later addition - first mentioned in Europe around 822 by a Carolingian Abbot, and again in 1067 by Abbess Hildegard of Bingen.
Beer produced before the Industrial Revolution continued to be made and sold on a domestic scale, although by the 7th century AD beer was also being produced and sold by European monasteries. During the Industrial Revolution, the production of beer moved from artisanal manufacture to industrial manufacture, and domestic manufacture ceased to be significant by the end of the 19th century. The development of hydrometers and thermometers changed brewing by allowing the brewer more control of the process, and greater knowledge of the results.
Today, the brewing industry is a global business, consisting of several dominant multinational companies and many thousands of smaller producers ranging from brewpubs to regional breweries. More than 133 billion liters (35 billion gallons) are sold per year—producing total global revenues of $294.5 billion (£147.7 billion) in 2006.

Brewing

The process of making beer is known as brewing. A dedicated building for the making of beer is called a brewery, though beer can be made in the home, and has been for much of beer's history. A company which makes beer is called either a brewery or a brewing company. Beer made on a domestic scale for non-commercial reasons is classed as homebrewing regardless of where it is made, though most homebrewed beer is made in the home. Brewing beer is subject to legislation and taxation in developed countries which from the late 19th century largely restricted brewing to a commercial operation only. However, the UK government relaxed legislation in 1963, followed by Australia in 1972, and USA in 1979 allowing homebrewing to become a popular hobby.
The purpose of brewing is to convert the starch source into a sugary liquid called wort which is then able to be fermented by yeast into the alcoholic beverage known as beer.
The first step, where the wort is created by mixing the starch source (normally malted barley) with hot water, is known as "mashing". Hot water (known as "liquor" in brewing terms) is mixed with crushed malt or malts (known as the "grain bill") in a mash tun. The mashing process takes around 1 to 2 hours, during which the starches are converted to sugars, and then the sweet wort is drained off the grains. The grains are now washed in a process known as "sparging" or "lautering". This washing allows the brewer to gather as much of the fermentable liquid from the grains as possible. Most modern breweries use a continuous wash. However, it is possible to go through a second or even third mash with the not quite spent grains. Each run would produce a weaker wort and thus a weaker beer. This process is known as second (and third) runnings. To brew with several runnings is called parti gyle brewing.
The sweet wort collected from sparging is put into a kettle or "copper" (so called because these vessels were traditionally made from copper) and boiled, usually for about one hour. During boiling, water in the wort evaporates, but the sugars and other components of the wort remain; this allows more efficient use of the starch sources in the beer. Boiling also destroys any remaining enzymes left over from the mashing stage. Hops are added during boiling in order to extract bitterness, flavour and aroma from them. Hops may be added at more than one point during the boil. The longer the hops are boiled, the more bitterness they contribute but less of the hop flavour and aroma remains in the beer.
After boiling, the hopped wort is now cooled ready for the yeast. In some breweries the hopped wort may pass through a "hopback" which is a small vat filled with hops, to add aromatic hop flavouring, and also to act as a filter; but usually the hopped wort is simply cooled for the fermenter, where the yeast is added. During fermentation, the wort becomes beer in a process which requires a week to months depending on the type of yeast and strength of the beer. In addition to producing alcohol, fine particulate matter suspended in the wort settles during fermentation. Once fermentation is complete, the yeast also settles, leaving the beer clear.
Fermentation is sometimes carried out in two stages, primary and secondary. Once most of the alcohol has been produced during primary fermentation, the beer is transferred to a new vessel and allowed a period of secondary fermentation. Secondary fermentation is used when the beer requires long storage before packaging or greater clarity. When the beer has fermented it is packaged either into casks for cask ale or kegs or bottles for other sorts of beer.

Ingredients

The basic ingredients of beer are water; a starch source, such as malted barley, able to be fermented (converted into alcohol); a brewer's yeast to produce the fermentation; and a flavouring such as hops. A mixture of starch sources may be used, with a secondary starch source, such as corn, rice and sugar, often being termed an adjunct, especially when used as a lower cost substitute for malted barley. Less widely used starch sources include millet, sorghum and cassava root in Africa, potato in Brazil, and agave in Mexico, among others.

Water

Beer is composed mostly of water. Different regions have water with different mineral components; as a result, different regions were originally better suited to making certain types of beer, thus giving them a regional character. For example, Dublin has hard water well-suited to making stout, such as Guinness; while Pilzen has soft water well-suited to making pale lager, such as Pilsner Urquell. The waters of Burton in England contain gypsum which benefits making pale ale to such a degree that brewers of pale ales will add gypsum to the local water in a process known as Burtonisation.

Starch source

The starch source in a beer provides the fermentable material and is a key determinant of the strength and flavour of the beer. The most common starch source used in beer is malted grain. Grain is malted by soaking it in water, allowing it to begin germination, and then drying the partially germinated grain in a kiln. Malting grain produces enzymes that convert starches in the grain into fermentable sugars. Different roasting times and temperatures are used to produce different colours of malt from the same grain. Darker malts will produce darker beers.
Nearly all beer includes barley malt as the majority of the starch. This is because of its fibrous husk, which is not only important in the sparging stage of brewing (in which water is washed over the mashed barley grains to form the wort), but also as a rich source of amylase, a digestive enzyme which facilitates conversion of starch into sugars. Other malted and unmalted grains (including wheat, rice, oats, and rye, and less frequently, corn and sorghum) may be used. In recent years a few brewers have produced gluten-free beer made with sorghum with no barley malt for those who cannot consume gluten-containing grains like wheat, barley, and rye.

Hops

Flavouring beer is the sole major commercial use of hops. The flower of the hop vine is used as a flavouring and preservative agent in nearly all beer made today. The flowers themselves are often called "hops".
The use of hops in beer was recorded by captive Jews in Babylon around 400 BC. Hops were used by monastery breweries, such as Corvey in Westphalia, Germany, from 822 AD, though the date normally given for widespread cultivation of hops for use in beer is the thirteenth century. Before the thirteenth century, and until the sixteenth century during which hops took over as the dominant flavouring, beer would be flavoured with other plants; for instance, Glechoma hederacea. Combinations of various aromatic herbs, berries, and even ingredients like wormwood would be combined into a mixture known as gruit and used as hops are now used. Some beers today, such as Fraoch by the Scottish Heather Ales company, and Cervoise Lancelot by the French Brasserie-Lancelot company, use plants other than hops for flavouring.
Hops contain several characteristics that brewers desire in beer: hops contribute a bitterness that balances the sweetness of the malt;The bitterness of beers is measured on the International Bitterness Units scale. Hops also contribute floral, citrus, and herbal aromas and flavours to beer; hops have an antibiotic effect that favours the activity of brewer's yeast over less desirable microorganisms; and the use of hops aids in "head retention", the length of time that a foamy head created by carbonation will last. The acidity of hops acts as a preservative.

Yeast

Yeast is the microorganism that is responsible for fermentation in beer. Yeast metabolises the sugars extracted from grains, which produces alcohol and carbon dioxide, and thereby turns wort into beer. In addition to fermenting the beer, yeast influences the character and flavour. The dominant types of yeast used to make beer are ale yeast (Saccharomyces cerevisiae) and lager yeast (Saccharomyces uvarum); their use distinguishes ale and lager. Brettanomyces ferments lambics, and Torulaspora delbrueckii ferments Bavarian weissbier. Before the role of yeast in fermentation was understood, fermentation involved wild or airborne yeasts. A few styles such as lambics rely on this method today, but most modern fermentation adds pure yeast cultures.

Clarifying agent

Some brewers add one or more clarifying agents to beer, which typically precipitate (collect as a solid) out of the beer along with protein solids and are found only in trace amounts in the finished product. This process makes the beer appear bright and clean, rather than the cloudy appearance of ethnic and older styles of beer such as wheat beers.
Common examples of clarifying agents include isinglass, obtained from swimbladders of fish; Irish moss, a seaweed; kappa carrageenan, from the seaweed Kappaphycus cottonii; Polyclar (artificial); and gelatin.If a beer is marked 'suitable for Vegans' then it has either been clarified with seaweed or with artificial agents.

Varieties of beer

While there are many different types of beer brewed around the globe, the basics of brewing beer are shared across national and cultural boundaries. The traditional European brewing regions — Germany, Belgium, the United Kingdom, Ireland, Poland, the Czech Republic, Denmark, The Netherlands and Austria — have local varieties of beer. In some countries, notably the USA, Canada and Australia, brewers have adapted European styles to such an extent that they have effectively created their own indigenous types. Despite the regional variations, beer is commonly categorised into two main types — the globally popular pale lagers and the more regionally distinct ales which are further categorised into other varieties such as pale ale, stout and brown ale.
The late British beer writer Michael Jackson in his 1977 book The World Guide To Beer categorised a variety of beers from around the world in local style groups suggested by local customs and names. Fred Eckhardt furthered Jackson's work in The Essentials of Beer Style in 1989.
The most common method of categorising beer is by the behaviour of the yeast used in the fermentation process. In this method of categorising, beers using a fast-acting yeast, which leaves behind residual sugars, are termed "ales", while beers using a slower-acting yeast, fermented at lower temperatures, which removes most of the sugars and leaving a clean, dry beer, are termed "lagers". Differences between some ales and lagers can be difficult to categorise. Steam beer, Kölsch, Alt, and some modern British Golden Summer Beers use elements of both lager and ale production. Baltic Porter and Bière de Garde may be produced by either lager or ale methods or a combination of both. However, lager production results in a cleaner tasting, drier and lighter beer than ale.

Ale

A modern ale is commonly defined by the strain of yeast used and the fermenting temperature. Ales are normally brewed with top-fermenting yeasts (most commonly Saccharomyces cerevisiae), though a number of British brewers, including Fullers and Weltons, use ale yeast strains that have less pronounced top-fermentation characteristics. The important distinction for ales is that they are fermented at higher temperatures and thus ferment more quickly than lagers.
Ale is typically fermented at temperatures between 15 and 24 °C (60 and 75 °F). At these temperatures, yeast produces significant amounts of esters and other secondary flavour and aroma products, and the result is often a beer with slightly "fruity" compounds resembling apple, pear, pineapple, banana, plum, or prune, among others. Typically ales have a sweeter, fuller body than lagers.
Before the introduction of hops into England from the Netherlands in the 15th century the name "ale" was exclusively applied to unhopped fermented beverages, the term "beer" being gradually introduced to describe a brew with an infusion of hops. This distinction no longer applies. The word 'ale' may come from the Old English ealu, in turn from the Proto-Indo-European base *alut-, which holds connotations of "sorcery, magic, possession, intoxication".
Real ale is the term coined by the Campaign for Real Ale (CAMRA) in 1973  for "beer brewed from traditional ingredients, matured by secondary fermentation in the container from which it is dispensed, and served without the use of extraneous carbon dioxide". It is applied both to bottle conditioned and cask conditioned beers.
Lambic, a beer of Belgium, is naturally fermented using wild yeasts, rather than cultivated. Many of these are not strains of brewer's yeast (Saccharomyces cerevisiae), and may have significant differences in aroma and sourness. Yeast varieties such as Brettanomyces bruxellensis and Brettanomyces lambicus are quite common in lambics. In addition, other organisms such as Lactobacillus bacteria produce acids which contribute to the sourness.

Lager

Lager is the English name for cool fermenting beers of Central European origin. Pale lagers are the most commonly consumed beers in the world. The name "lager" comes from the German lagern for "to store", as brewers around Bavaria stored beer in cool cellars and caves during the warm summer months. These brewers noticed that the beers continued to ferment, and also to clear of sediment when stored in cool conditions.
Lager yeast is a cool "bottom-fermenting yeast" (Saccharomyces pastorianus), and typically undergoes primary fermentation at 7–12 °C (45–55 °F) (the "fermentation phase"), and then is given a long secondary fermentation at 0–4 °C (32–40 °F) (the "lagering phase"). During the secondary stage, the lager clears and mellows. The cooler conditions also inhibit the natural production of esters and other byproducts, resulting in a "cleaner" tasting beer.
Modern methods of producing lager were pioneered by Gabriel Sedlmayr the Younger, who perfected dark brown lagers at the Spaten Brewery in Bavaria, and Anton Dreher, who began brewing a lager, probably of amber-red colour, in Vienna in 1840–1841. With improved modern yeast strains, most lager breweries use only short periods of cold storage, typically 1–3 weeks.

Colour

The colour of a beer is determined by the malt. The most common colour is a pale amber produced from using pale malts. "Pale lager" and "pale ale" are terms used for beers made from malt dried with coke. Coke had been first used for roasting malt in 1642, but it was not until around 1703 that the term "pale ale" was first used.
In terms of sales volume, most of today's beer is based on the pale lager brewed in 1842 in the town of Pilsen, in the Czech Republic. The modern pale lager is light in colour with a noticeable carbonation (fizzy bubbles), and a typical alcohol by volume content of around 5%. The Pilsner Urquell, Bitburger, and Heineken brands of beer are typical examples of pale lager, as are the American brands Budweiser, Coors, and Miller.
Dark beers are usually brewed from a pale malt or lager malt base with a small proportion of darker malt added to achieve the desired shade. Other colourants—such as caramel—are also widely used to darken beers. Very dark beers, such as stout use dark or patent malts that have been roasted longer. Guinness and similar beers include roasted unmalted barley.

Alcoholic strength

Beer ranges from less than 3% alcohol by volume (abv) to almost 30% abv. The alcohol content of beer varies by local practice or beer style. The pale lagers that most consumers are familiar with fall in the range of 4–6%, with a typical abv of 5%. The customary strength of British ales is quite low, with many session beers being around 4% abv. Some beers, such as table beer are of such low alcohol content (1%~4%) that they are served instead of soft drinks in some schools.
The alcohol in beer comes primarily from the metabolism of sugars that are produced during fermentation. The quantity of fermentable sugars in the wort and the variety of yeast used to ferment the wort are the primary factors that determine the amount of alcohol in the final beer. Additional fermentable sugars are sometimes added to increase alcohol content, and enzymes are often added to the wort for certain styles of beer (primarily "light" beers) to convert more complex carbohydrates (starches) to fermentable sugars. Alcohol is a byproduct of yeast metabolism and is toxic to the yeast; typical brewing yeast cannot survive at alcohol concentrations above 12% by volume. Low temperatures and too little fermentation time decreases the effectiveness of yeasts, and consequently decreases the alcohol content.

Exceptionally strong beers

The strength of beers has climbed during the later years of the 20th century. Vetter 33 a 10.5% abv (33 degrees Plato, hence Vetter "33") doppelbock was listed in the 1994 Guinness Book of World Records as the strongest beer at that time, though Samichlaus, by the Swiss brewer Hürlimann, had also been listed by the Guinness Book of World Records as the strongest at 14% abv.
Since then some brewers have used champagne yeasts to increase the alcohol content of their beers. Samuel Adams reached 20% abv with Millennium and then surpassed that amount to 25.6% abv with Utopias. The strongest beer sold in Britain was Delaware's Dogfish Head's World Wide Stout, a 21% abv stout which was available from UK Safeways in 2003. In Japan in 2005, the Hakusekikan Beer Restaurant sold an eisbock, strengthened through freeze distillation, believed to be 28% abv The beer that is considered to be the strongest yet made is Hair of the Dog's Dave—a 29% abv barley wine made in 1994. The strength was achieved by freeze distilling a 10% ale twice.

Related beverages

Around the world there are a number of traditional and ancient starch based beverages classed as beer. In Africa there are various ethnic beers made from sorghum or millet, such as Oshikundu in Namibia, and Tella in Ethiopia. Kyrgyzstan also has a beer made from millet, it is a low alcohol, somewhat porridge-like drink called Bozo. Bhutan, Nepal, Tibet and Sikkim also use millet in Chhaang, a popular semi-fermented rice/millet drink in the eastern Himalayas. Further east in China are found Huangjiu and Choujiu - traditional rice-based beverages related to beer. The Andes in South America has Chicha, made from germinated corn; while the indigenous peoples in Brazil have Cauim a traditional beverage made since pre-Columbian times by chewing manioc so that enzymes present in human saliva can break down the starch into fermentable sugars; this is similar to Masato in Peru.
Some beers which are made from bread, which is linked to the earliest forms of beer, are Sahti in Finland, Kvass in Russia and the Ukraine, and Bouza in Sudan.

Brewing industry

The brewing industry is a global business, consisting of several dominant multinational companies and many thousands of smaller producers ranging from brewpubs to regional breweries. More than 133 billion liters (35 billion gallons) are sold per year—producing total global revenues of $294.5 billion (£147.7 billion) in 2006.
SABMiller became the largest brewing company in the world when it acquired Royal Grolsch, Brewer of Dutch premium beer brand Grolsch. InBev is the second-largest beer-producing company in the world, and Anheuser-Busch holds the third spot, but after the proposed merger (announced 13 July 2008), between InBev and Anheuser-Busch, the new Anheuser-Busch InBev company will be the largest brewer in the world.

Serving


Draught beer from a pressurised keg is the most common method of dispensing in bars around the world. A metal keg is pressurised with carbon dioxide (CO2) gas which drives the beer to the dispensing tap or faucet. Some beers, notably stouts, such as Guinness and "smooth" bitters, such as Boddingtons, may be served with a nitrogen/carbon dioxide mixture. Nitrogen produces fine bubbles, resulting in a dense head and a creamy mouthfeel. Some types of beer can also be found in smaller, disposable kegs called beer balls.
In the 1980s, Guinness introduced the beer widget, a nitrogen pressurised ball inside a can which creates a foamy head. The words "draft" and "draught" can be used as marketing terms to describe canned or bottled beers containing a beer widget, or which are cold filtered rather than pasteurised.
Cask-conditioned ales (or "cask ales") are unfiltered and unpasteurised beers. These beers are termed "real ale" by the CAMRA organisation. Typically, when a cask arrives in a pub, it is placed horizontally on a frame called a "stillage" which is designed to hold it steady and at the right angle, and then allowed to cool to cellar temperature (typically between 12-14 °C/53-57 °F), before being tapped and vented—a tap is driven through a (usually rubber) bung at the bottom of one end, and a hard spile or other implement is used to open a hole in the side of the cask, which is now uppermost. The act of stillaging and then venting a beer in this manner typically disturbs all the sediment, so it must be left for a suitable period to "drop" (clear) again, as well as to fully condition—this period can take anywhere from several hours to several days. At this point the beer is ready to sell, either being pulled through a beer line with a hand pump, or simply being "gravity-fed" directly into the glass.

Packaged

Most beers are cleared of yeast by filtering when packaged in bottles and cans. However, bottle conditioned beers retain some yeast—either by being unfiltered, or by being filtered and then reseeded with fresh yeast. It is usually recommended that the beer be poured slowly, leaving any yeast sediment at the bottom of the bottle. However, some drinkers prefer to pour in the yeast; this practice is customary with wheat beers. Typically, when serving a hefeweizen, 90% of the contents are poured, and the remainder is swirled to suspend the sediment before pouring it into the glass. Alternatively, the bottle may be inverted prior to opening. Glass bottles are always used for bottle conditioned beers.
Many beers are sold in beverage cans, though there is considerable variation in the proportion between different countries. In 2001, in Sweden 63.9% of beer was sold in cans. People either drink from the can or pour the beer into a glass. Cans protect the beer from light and have a seal less prone to leaking over time than bottles. Cans were initially viewed as a technological breakthrough for maintaining the quality of a beer, then became commonly associated with less-expensive, mass-produced beers, even though the quality of storage in cans is much like bottles. Plastic (PET) bottles are used by some breweries.

Serving temperature

The temperature of a beer has an influence on a drinker's experience; warmer temperatures reveal the range of flavours in a beer, however cooler temperatures are more refreshing. Most drinkers prefer pale lager to be served chilled, a low or medium strength pale ale to be served cool, while a strong barley wine or imperial stout to be served at room temperature.
Beer writer Michael Jackson proposed a five-level scale for serving temperatures: well chilled (7 °C/45 °F) for "light" beers (pale lagers); chilled (8 °C/47 °F) for Berliner Weisse and other wheat beers; lightly chilled (9 °C/48 °F) for all dark lagers, altbier and German wheat beers; cellar temperature (13 °C/55 °F) for regular British ale, stout and most Belgian specialities; and room temperature (15.5 °C/60 °F) for strong dark ales (especially trappist beer) and barley wine.
Drinking chilled beer is a social trend that began with the development of artificial refrigeration, and by the 1870s was spread in those countries that concentrated on brewing pale lager. Chilling below 15.5 °C/60 °F starts to reduce taste awareness, and reduces it significantly below 10 °C/50 °F; while this is acceptable for beers without an appreciable aroma or taste profile, beers brewed with more than basic refreshment in mind reveal their flavours more when served unchilled - either cool or at room temperature. Cask Marque, a non profit making UK beer organisation, has set a temperature standard range of 12°-14°C (53°-57°F) for cask ales to be served.

Vessels

Beer is consumed out of a variety of vessels, such as a glass, a beer stein, a mug, a pewter tankard, a beer bottle or a can. Some drinkers consider that the type of vessel influences their enjoyment of the beer. In Europe, particularly Belgium, breweries offer branded glassware intended only for their own beers.
The pouring process has an influence on a beer's presentation. The rate of flow from the tap or other serving vessel, tilt of the glass, and position of the pour (in the centre or down the side) into the glass all influence the end result, such as the size and longevity of the head, lacing (the pattern left by the head as it moves down the glass as the beer is drunk), and turbulence of the beer and its release of carbonation.

Beer and society


Social context

Various social traditions and activities are associated with beer drinking, such as playing cards, darts, bags, or other pub games; attending beer festivals, or visiting a series of different pubs in one evening; joining an organisation such as CAMRA; or rating beer. Various drinking games, such as beer pong, flip cup and quarters are also very popular.

International consumption

Beer is considered to be a social lubricant in many societies. Beer is consumed in countries all over the world. There are breweries in Middle Eastern countries such as Lebanon, Iraq and Syria as well as African countries (see African beer) and remote countries such as Mongolia. Sales of beer are four times that of wine, the second most popular alcoholic beverage. In most societies, beer is the most popular alcoholic beverage.

Health effects


The main active ingredient of beer is alcohol and therefore the health effects of alcohol apply to beer. The moderate consumption of alcohol, including beer, is associated with a decreased risk of cardiac disease, stroke and cognitive decline. While the long-term effects of alcohol abuse include the risk of developing alcoholism, alcoholic liver disease, and some forms of cancer.
Brewer's yeast is known to be a rich source of nutrients; therefore, as expected, beer can contain significant amounts of nutrients, including magnesium, selenium, potassium, phosphorus, biotin, and B vitamins. In fact, beer is sometimes referred to as "liquid bread". Some sources maintain that filtered beer loses much of its nutrition.
A 2005 Japanese study found that low alcohol beer may possess strong anti-cancer properties.Another study found nonalcoholic beer to mirror the cardiovascular benefits associated with moderate consumption of alcoholic beverages. However, much research suggests that the primary health benefit from alcoholic beverages comes from the alcohol they contain.
It is considered that overeating and lack of muscle tone is the main cause of a beer belly, rather than beer consumption. A recent study, however, found a link between binge drinking and a beer belly. But with most overconsumption it is more a problem of improper exercise and overconsumption of carbohydrates than the product itself. Several diet books quote beer as having the same glycemic index as maltose, a very high (and therefore undesirable) 110; however the maltose undergoes metabolism by yeast during fermentation so that beer consists mostly of water, hop oils and only trace amounts of sugars, including maltose.

Vodka  

Vodka is one of the world's most popular distilled beverages. It is a clear liquid which consists of mostly water and ethanol purified by distillation — often multiple distillation — from a fermented substance such as potatoes, grain (usually rye or wheat) or sugar beet molasses, and an insignificant amount of other substances such as flavorings or unintended impurities.
Vodka usually has an alcohol content of 35% to 50% by volume. The classic Polish, Lithuanian and Russian vodka is 40% (80 proof). This can be attributed to the Russian standards for vodka production introduced in 1894 by Alexander III. According to the Vodka Museum in Moscow, Dmitri Mendeleev, a Russian chemist, found the perfect percentage to be 38. However, since spirits in his time were taxed on their strength, the percentage was rounded up to 40 to simplify the tax computation. At strengths less than this, Vodka drunk neat (without ice and not mixed with other liquids) can taste "watery": above this strength, the taste of Vodka can have more "burn". Some governments set a minimum alcohol content for a spirit to be called "Vodka". For example, the European Union sets a minimum of 37.5% alcohol by volume.
Although vodka is traditionally drunk neat in the Eastern European and Nordic countries of the "Vodka Belt", its popularity elsewhere owes much to its usefulness in cocktails and other mixed drinks, such as the Bloody Mary, the Screwdriver, the vodka tonic, vodka martini, and most recently vodka red bull.

Etymology

"Vodka" is a diminutive of the Slavic word woda/voda standing for water.
The word is found for the first time in the court documents from the Palatinate of Sandomierz in Poland dating to 1405 and 1537. At these times the word referred to medicines and cosmetics. A number of Russian pharmaceutical lists contain the terms "vodka of bread wine" (водка хлебного вина vodka khlebnogo vina) and "vodka in half of bread wine" (водка полу хлебного вина vodka polu khlebnogo vina). As alcohol had long been used as a basis for medicines, this implies that the term vodka could be a noun derived from the verb vodit’, razvodit’ (водить, разводить), "to dilute with water".
Bread wine was a spirit distilled from alcohol made from grain (as opposed to grape wine) and hence "vodka of bread wine" would be a water dilution of a distilled grain spirit.
While the word could be found in manuscripts and in lubok (лубок, pictures with text explaining the plot, a Russian predecessor of the comic), it began to appear in Russian dictionaries in the mid-19th century.
Another possible connection for "vodka" with "water" is the name of the medieval alcoholic beverage aqua vitae (Latin, literally, "water of life"), which is reflected in Polish "okowita", Ukrainian оковита, or Belarusian акавіта. (Note that whisky has a similar etymology, from the Irish/Scottish Gaelic uisce beatha/uisge-beatha.)
People in the area of vodka's probable origin have names for vodka with roots meaning "to burn": Samogitian: degtėnė; Polish: gorzałka; Ukrainian: горілка, horilka; Belarusian: гарэлка, harelka; Lithuanian: degtinėSlavicism (a arielka, is also in use, colloquially and in proverbs); Latvian: degvīns; Finnish: paloviina. In Russian during 17th and 18th century горящее вино (goryashchee vino, "burning wine") was widely used. Compare to Danish; brændevin; Dutch: brandewijn; Swedish: brännvin; Norwegian: Brennevin (although the latter terms refer to any strong alcoholic beverage). Tet
Another Slavic/Baltic archaic term for hard liquors was "green wine" (Russian: zeleno vino, Lithuanian: žalias vynas).

History

The origins of vodka cannot be traced definitively, but it is believed to have originated in the grain-growing region that now embraces Poland, Belarus, Lithuania, Ukraine, and western Russia. It also has a long tradition in Scandinavia.
For many centuries beverages contained little alcohol. It is estimated that the maximum amount was about 14% as only this amount is reachable by means of natural fermentation. The still allowing for distillation – “the burning of wine” – was invented in the 8th century.

Poland

In Poland, vodka (Polish: wódka), has been produced since the early Middle Ages. In these early days, the spirits were used mostly as medicines. Stefan Falimierz asserted in his 1534 works on herbs that vodka could serve "to increase fertility and awaken lust". Around 1400 it became also a popular drink in Poland. Wódka lub gorzała (1614), by Jerzy Potański, contains valuable information on the production of vodka. Jakub Kazimierz Haur, in his book Skład albo skarbiec znakomitych sekretów ekonomiej ziemiańskiej (A Treasury of Excellent Secrets about Landed Gentry's Economy, Kraków, 1693), gave detailed recipes for making vodka from rye.
Some Polish vodka blends go back centuries. Most notable are Żubrówka, from about the 16th century; Goldwasser, from the early 17th; and aged Starka vodka, from the 16th. In the mid-17th century, the szlachta (nobility) were granted a monopoly on producing and selling vodka in their territories. This privilege was a source of substantial profits. One of the most famous distilleries of the aristocracy was established by Princess Lubomirska and later operated by her grandson, Count Alfred Wojciech Potocki. The Vodka Industry Museum, now housed at the headquarters of Count Potocki's distillery, has an original document attesting that the distillery already existed in 1784. Today it operates as "Polmos Łańcut."
Large-scale vodka production began in Poland at the end of the 16th century, initially at Kraków, whence spirits were exported to Silesia before 1550. Silesian cities also bought vodka from Poznań, a city that in 1580 had 498 working spirits distilleries. Soon, however, Gdańsk outpaced both these cities. In the 17th and 18th centuries, Polish vodka was known in the Netherlands, Denmark, England, Russia, Germany, Austria, Hungary, Moldavia, Ukraine and the Black Sea basin.
Early production methods were primitive. The beverage was usually low-proof, and the distillation process had to be repeated several times (a three-stage distillation process was common). The first distillate was called "brantówka," the second — "szumówka," the third — "okowita" (from "aqua vitae"), which generally contained 70–80% alcohol by volume. Then the beverage was watered down, yielding a simple vodka (30–35%), or a stronger one if the watering was done using an alembic. The exact production methods were described in 1768 by Jan Paweł Biretowski and in 1774 by Jan Chryzostom Simon. The beginning of the 19th century inaugurated the production of potato vodka, which immediately revolutionized the market.
The end of the 18th century marked the start of the vodka industry in Poland (eastern part of Poland was part of Russian empire at that time). Vodkas produced by the nobility and clergy became a mass product. The first industrial distillery was opened in 1782 in Lwów by Jan Baczewski. He was soon followed by Jakub Haberfeld, who in 1804 established a factory at Oświęcim, and by Hartwig Kantorowicz (1823) at Poznań. The implementation of new technologies in the second half of the 19th century, which allowed the production of clear vodkas, contributed to their success. The first rectification distillery was established in 1871. In 1925 the production of clear vodkas was made a Polish government monopoly.
After World War II, all vodka distilleries were taken over by Poland's communist government. During the 1980s, the sale of vodka was rationed. After the victory of the Solidarity movement, all distilleries were privatized, leading to an explosion of brands.

Russia

 t was not originally called vodka — instead, the term bread wine (хлебное вино; khlebnoye vino) was used. Until mid-18th century, it remained relatively low on alcohol content, not exceeding 40% by volume. It was mostly sold in taverns and was quite expensive. At the same time, the word vodka was already in use, but it described herbal tinctures (similar to absinthe), containing up to 75% by volume alcohol, and made for medicinal purposes.

The first written usage of the word vodka in an official Russian document in its modern meaning is dated by the decree of Empress Elizabeth of June 8, 1751, which regulated the ownership of vodka distilleries. The taxes on vodka became a key element of government finances in Tsarist Russia, providing at times up to 40% of state revenue. By the 1860s, due to the government policy of promoting consumption of state-manufactured vodka, it became the drink of choice for many Russians. In 1863, the government monopoly on vodka production was repealed, causing prices to plummet and making vodka available even to low-income citizens. By 1911, vodka comprised 89% of all alcohol consumed in Russia. This level has fluctuated somewhat during the 20th century, but remained quite high at all times. The most recent estimates put it at 70% (2001). Today, some popular vodka producers/brands are (amongst others) Stolichnaya, Absolut vodka, Eristoff, Smirnoff and Borissov.

Ukraine

Horilka (Ukrainian: горілка) is the Ukrainian term for "vodka". Horilka may also be used in a generic sense in the Ukrainian language to mean moonshine, whisky or other strong spirits. Among East Slavic peoples, the term horilka is used to stress the Ukrainian origin of a vodka, for example, in Nikolai Gogol's historic novel Taras Bulba: "and bring us a lot of horilka, but not of that fancy kind with raisins, or with any other such things—bring us horilka of the purest kind, give us that demon drink that makes us merry, playful and wild!".
A pertsivka or horilka z pertsem (pepper vodka) is a vodka with whole fruits of capsicum put into the bottle, turning horilka into a sort of bitters. Horilkas are also often made with honey, mint, or even milk, the latter not typical of vodkas of other origins. Some claim that horilka is considered stronger and spicier than typical Russian vodka.

Today

Vodka is now one of the world's most popular spirits. It was rarely consumed outside Europe before the 1950s. By 1975, vodka sales in the United States overtook those of bourbon, previously the most popular hard liquor and the native spirit of that country. In the second half of the 20th century, vodka owed its popularity in part to its reputation as an alcoholic beverage that "leaves you breathless", as one ad put it — no smell of liquor remains detectable on the breath, and its neutral flavor allows it to be mixed into a wide variety of drinks, often replacing other liquors (particularly Gin) in traditional drinks, such as the Martini.
According to The Penguin Book of Spirits and Liqueurs, "Its low level of fusel oils and congenerics — impurities that flavour spirits but that can contribute to the after-effects of heavy consumption — led to its being considered among the 'safer' spirits, though not in terms of its powers of intoxication, which, depending on strength, may be considerable."
Russian culinary author William Pokhlebkin compiled a history of the production of vodka in Russia during the late 1970s as part of the Soviet case in a trade dispute; this was later published as A History of Vodka. Pokhlebkin claimed that while there was a wealth of publications about the history of consumption and distribution of vodka, virtually nothing had been written about vodka production. Among his assertions were that the word "vodka" was used in popular speech in Russia considerably earlier than the middle of the 18th century, but the word did not appear in print until the 1860s.

Production

Vodka may be distilled from any starch/sugar-rich plant matter; most vodka today is produced from grains such as sorghum, corn, rye or wheat. Among grain vodkas, rye and wheat vodkas are generally considered superior. Some vodka is made from potatoes, molasses, soybeans, grapes, sugar beets and sometimes even byproducts of oil refining or wood pulp processing. In some Central European countries like Poland some vodka is produced by just fermenting a solution of crystal sugar and yeast. In the European Union there are talks about the standardization of vodka, however, the Vodka Belt countries insist that only spirits produced from grains, potato and sugar beet molasses be allowed to be branded as "vodka", following the traditional methods of production.

Distilling and filtering

A common property of vodkas produced in the USA and Europe is the extensive use of filtration prior to any additional processing, such as the addition of flavourants. Filtering is sometimes done in the still during distillation, as well as afterward, where the distilled vodka is filtered through charcoal and other media. This is because under U.S. and European law vodka must not have any distinctive aroma, character, colour or flavour. However, this is not the case in the traditional vodka producing nations, so many distillers from these countries prefer to use very accurate distillation but minimal filtering, thus preserving the unique flavours and characteristics of their products.
The "stillmaster" is the person in charge of distilling the vodka and directing its filtration. When done correctly, much of the "fore-shots" and "heads" and the "tails" separated in distillation process are discarded. These portions of the distillate contain flavour compounds such as ethyl acetate and ethyl lactate (heads) as well as the fusel oils (tails) that alter the clean taste of vodka. Through numerous rounds of distillation, or the use of a fractioning still, the taste of the vodka is improved and its clarity is enhanced. In some distilled liquors such as rum and baijiu, some of the heads and tails are not removed in order to give the liquor its unique flavour and mouth-feel.
Repeated distillation of vodka will make its ethanol level much higher than legally allowed. Depending on the distillation method and the technique of the stillmaster, the final filtered and distilled vodka may have as much as 95-96% ethanol. As such, most vodka is diluted with water prior to bottling. This level of distillation is what truly separates a rye-based vodka (for example) from a rye whisky; while the whisky is generally only distilled down to its final alcohol content, vodka is distilled until it is almost totally pure alcohol and then cut with water to give it its final alcohol content and unique flavour, depending on the source of the water.

Flavoring

Apart from the alcoholic content, vodkas may be classified into two main groups: clear vodkas and flavoured vodkas. From the latter ones, one can separate bitter tinctures, such as Russian Yubileynaya (anniversary vodka) and Pertsovka (pepper vodka).
While most vodkas are unflavoured, many flavoured vodkas have been produced in traditional vodka-drinking areas, often as home-made recipes to improve vodka's taste or for medicinal purposes. Flavourings include red pepper, ginger, fruit flavours, vanilla, chocolate (without sweetener), and cinnamon. Ukrainians produce a commercial vodka that includes St John's Wort. Poles and Belarusians add the leaves of the local bison grass to produce Żubrówka (Polish) and Zubrovka (Belarusian) vodka, with slightly sweet flavour and light amber colour. In Ukraine and Russia, vodka flavoured with honey and pepper (Pertsovka, in Russian, Z pertsem, in Ukrainian) is also very popular. In Poland, a famous vodka containing honey is called Krupnik.
This tradition of flavouring is also prevalent in the Nordic countries, where vodka seasoned with herbs, fruits and spices is the appropriate strong drink for midsummer seasonal festivities. In Sweden, there are forty-odd common varieties of herb-flavoured vodka (kryddat brännvin). In Poland there is a separate category, nalewka, for vodka-based spirits with fruit, root, flower, or herb extracts, which are often home-made or produced by small commercial distilleries. Its alcohol content is between 15 to 75%. The Finnish vodka "Finlandia" was the first vodka company to mass produce flavoured Vodka.
The Poles make a very pure (95%, 190 proof) rectified spirit (Polish language: spirytus rektyfikowany). Technically a form of vodka, it is sold in liquor stores, not pharmacies. Similarly, the German market often carries German, Hungarian, Polish, and Ukrainian-made varieties of vodka of 90 to 95% alcohol content. A Bulgarian vodka, Balkan 176°, is 88% alcohol.

Other processing

Due to the low freezing point of alcohol, vodka can be stored in ice or a freezer without any crystallization of water. In countries where alcohol levels are generally low (the USA for example, due to alcohol taxes varying with alcohol content), individuals sometimes increase the alcohol percentage by a form of freeze distillation.
This is done by placing the vodka in an open vessel (bowl, etc) in the freezer, and then after it has reached a temperature below the freezing point of water, adding ice cubes, to which the free water within the vodka will crystallize, leaving a higher alcohol concentration behind.

Vodka and the EU

The recent success of grape-based vodka in the United States has prompted traditional vodka producers in the Vodka Belt countries of Poland, Finland, Lithuania and Sweden to campaign for EU legislation that will categorize only spirits made from grain or potatoes as "Vodka" rather than spirits made from any ethyl alcohol (provided, for example, by apples and grapes). This proposition has provoked heavy criticism from south European countries, which often distill used mash from wine-making into spirits (although higher quality mash is usually distilled into some variety of pomace brandy, lower-quality mash is better turned into a neutral-flavoured spirits instead). Any vodka then not made from either grain or potatoes would have to display the products used in its production. This regulation was adopted by the European Parliament on June 19, 2007.

Health

Vodka consumed in sufficient amounts can be lethal as can any alcoholic beverage and can cause dehydration, digestive irritation, and other symptoms associated with a hangover. These are inherent properties of ethanol, even if to a lesser degree than the methanol, fusel oils, and other alcohols which are absent in pure vodka.
In some countries black-market vodka or "bathtub" vodka is widespread because it can be produced easily and avoid taxation. However, severe poisoning, blindness, or death can occur as a result of dangerous industrial ethanol substitutes being added by black-market producers. In March 2007, BBC News UK made a documentary to find the cause of severe jaundice among imbibers of the "bathtub" vodka. The cause was found to be an industrial disinfectant (Extrasept) added to the vodka by the illegal distillers because of its high alcohol content and low price of acquisition. Death toll estimates list at least 120 dead and more than 1,001 poisoned. The death toll is expected to rise due to the chronic nature of the cirrhosis that was causing the jaundice. However, Taurine (present in Red Bull) has been proven effective in removing fatty liver deposits in humans, liver disease, and reducing cirrhosis in the rat. Questions remain about the psychological effect of taurine taken at the time of alcohol consumption, due to the inhibition of sleep that can result.

Metaxa  

Metaxa (Greek: Μεταξά) is a Greek distilled spirit invented by Spyros Metaxas in 1888. It is a blend of brandy and wine made from sun-dried Savatiano, Soultanina and Black Corinthian grape varieties. It is then blended with an aged Muscat wine from Samos and Lemnos. The distillates are aged in hand-made French Limousin oak casks for a minimum period of three years before being flavoured with a secret herbal mixture, that includes rose leaves, and distilled water. This mixture is allowed to "marry" for at least six months, then chilled at -6°C for 48 hours, filtered, before being bottled.

Production

The first production of the distillates begins with the distillation of various wine varieties (mainly Savatiano and Roditi) that after a double distillation are kept in cellars in relatively small, brand new, oak, of the limousine type barrels of 300-350 lt. usually made in France. Those barrels have wide pores serving therefore a more effective oxygenation of the distillates. Some of the distillates are moved in large barrels of 3 cubic meter volume to mature further and used for the main body of the blend. It will mature anywhere from 3 (the three star Metaxa) to 30 years for the Grand Reserve.
The mean time wine is being prepared for the Alexandrian and Samian Moschatto from the area of Samos, Limnos and Patras. The wine is maturing for nearly two years in used metaxa barrels. It turns to a deep caramel color with very rich aromas, from the moschatto with dominant the aromas of dried fruits, levanter, white roses and hints of various spices. Its flavor is rich and sweet.
The third part of the process is the most top guarded secret of the company and only a few people know the process and the precise recipe. A mixture of various spices and distilled water is prepared. To the base, the rose petals, spices and other herbal flavorings are added. The final product has a very complex and unique aromatic character that has aromas, of roses, pepper, bay leaf, cinnamon and nutmeg. This mixture is allowed to "marry" for at least six months, then chilled at -6°C for 48 hours, filtered, before being bottled.
Those three blends are mixed at the final blending in such a way that the quality, taste, color and aromas of the brandy are kept as constant as possible. Final steps involve the correction of the color and the balancing of the alcohol levels. Most of them are mixed with young Moschatto wine to mellow the flavor, end therefore they are slightly maturing when are kept in the bottle.

Types of Metaxa

Metaxa comes in five major varieties Three Stars, Five Stars, Seven Stars, Twelve Stars and the Grand Reserve. The number of stars represents the number of Maturing years. The three and 5 star are not as different, but the 5 star is certainly more dry making the alcohol more pronounced. The seven and twelve star are much more flavorful and complex, while the twelve is again more dry but that is because there is no addition of wine. In both cases you can literally smell and taste the barrel in which the brandy matured. The grand Reserve is the most expensive and hardest to find.
In Greece there is a 16 star version available. Additional varieties and collectors items, such as the Grand Olympian Reserve Celebration Edition, are available only in some regions. It can be served neat, on the rocks, or mixed (usually with sours).

History of Metaxa

The founder of the distillery was Spyros Metaxas, a historic figure in Greek history. In 1888, a little over 50 years after the Greek War of Independence, a young, enthusiastic, businessman thought that his tavern was not good enough. He wanted more elegance, more challenges. He created the first brandy and was involved in the foundation of the first distillation facility. He visualized a drink that would conquer the world and therefore he soon built new factories in Istanbul and in Odessa. In 1900 the first exports to the United States took place and the brandy became known as the flying brandy. Unfortunately death cut his life short, but his sons carried on his work. That brandy is the only Greek industry that survived the two world wars. In 1968 the factory was rebuilt and, although it consists of state-of-the-art equipment, its output tastes the same as from the traditional method.
Metaxa won over the toughest critics and has earned a respected position in the pantheon of fine spirits. In 1989 the company was bought by the British drinks group Grand Metropolitan (now re branded as Diageo) and was later sold to the Remy Cointreau group .

Metaxa Facts:

  • Fidel Castro met with Spyros Metaxa on his trip in a ship to the United States. Metaxa was transporting brandy for him at the time Fidel was moving to Cuba to start his revolution. They both had a shot of the fine spirit and thereafter Fidel became fan of Metaxa.
  • Metaxa was the first alcoholic drink consumed in space.
  • It is exported to over 60 countries.
  • The label shows a Salaminomaho (Salamina fighter), a figure of an Ancient Greek fighter that was carved on a coin of that era and found during the excavation of the first factory in 1888.

Tequila  

Tequila is an agave-based spirit made primarily in the area surrounding Tequila, 65 kilometres (40 mi) in the northwest of Guadalajara and in the highlands (Los Altos) of the western Mexican state of Jalisco. The volcanic soil in the region surrounding Tequila is particularly well suited to the growing of the cactus-like blue agave, and more than 300 million of the plants are harvested there each year. However, U.S. and Mexican laws state that tequila can be produced anywhere in Mexico, and the country boasts several other tequila-producing regions.
Tequila is most often made at a 38–40% alcohol content (76–80 proof), but there are also several varieties of tequila produced with 43–46% alcohol content (86–92 proof).

History

Tequila was first produced in the 16th century near the location of the city of Tequila, which was not officially established until 1656. The Aztec people had previously made a fermented beverage from the agave plant, which they called octli (later, and more popularly called pulque), long before the Spanish arrived in 1521. When the Spanish conquistadors ran out of their own brandy, they began to distill this agave drink to produce North America's first indigenous distilled spirit.
Some 80 years later, around 1600, Don Pedro Sánchez de Tagle, the Marquis of Altamira, began mass-producing tequila at the first factory in the territory of modern-day Jalisco. By 1608, the colonial governor of Nueva Galicia had begun to tax his products.
The tequila that is popular today was first mass-produced in the early 1800s in Guadalajara, Mexico.
Don Cenobio Sauza, founder of Sauza Tequila and Municipal President of the Village of Tequila from 1884-1885, was the first to export tequila to the United States. Don Cenobio's grandson Dan Javier gained international attention for insisting that "there cannot be tequila where there are no agaves!" His efforts led to the practice that real tequila can only come from the State of Jalisco.

Recent history

Since 2002, sales of ultra-premium and super-premium tequilas have grown at a rate of 28 percent. That is an average growth rate of 8.6 percent per year, as reported by the Distilled Spirits Council of the United States. With tequila sales last year projected to fall just short of 10 million cases, sales actually exceeded expectations by reaching well over 10 million cases as shown in the 2007 report by IWSR based on Adams Liquor Handbook. In the late 1990s and early 2000s, increasing worldwide popularity of tequila drove corporate interest in the drink. Notable developments as a result included:
  • The purchase of Herradura by Brown-Forman for $776 million in September 2006.
  • A new NOM (Norma Oficial Mexicana) for tequila (NOM-006-SCFI-2005) was issued in 2006, and among other changes, introduced a category of tequila called "extra añejo" or "ultra-aged" which must be aged a minimum of 3 years.
  • The purchase of the Sauza and El Tesoro brands by massive holding company Fortune Brands.
Although some tequilas have remained as family owned brands, most well-known tequila brands are owned by large multinational corporations. However, there are over 100 distilleries making over six hundred brands of tequila in Mexico and over 2,000 brand names have been registered.
The Tequila Regulatory Council of Mexico originally did not permit flavored tequila to carry the tequila name. In 2004, the Council decided to allow flavored tequila to be called tequila, with the exception of pure agave tequila, which still could not be flavored.
A one-liter bottle of limited-edition premium tequila was sold for $225,000 in July 2006 in Tequila, Jalisco, by the company Tequila Ley .925. The bottle which contains the tequila is a two-kilo display of platinum and gold. The manufacturer has received the Certificate from Guinness World Records for the most expensive bottle of liquor ever sold.

2006 Tequila Trade Agreement

In 2003, Mexico issued proposal that would require all Mexican-made tequila be bottled in Mexico before being exported to other countries. The Mexican government said that bottling tequila in Mexico would guarantee its quality. Liquor companies in the United States said that Mexico just wanted to create bottling jobs in their own country. Liquor companies in the United States also claimed this rule would violate international trade agreements and was in discord with usual exporting practices worldwide. The proposal may have resulted in the loss of jobs at plants in California, Arkansas, Missouri, and Kentucky, because Mexican tequila exported in bulk to the United States is bottled in those plants. On January 17, 2006, the United States and Mexico signed an agreement allowing the continued bulk import of tequila into the United States. The agreement also created a "tequila bottlers registry" to identify approved bottlers of tequila and created an agency to monitor the registry.

TMA ("tristeza y muerte de agave") is a blight that has reduced the production of the agave grown to produce tequila. This has resulted in lower production and higher prices throughout the early 2000s, and due to the long maturation of the plant, will likely continue to affect prices for years to come.


Types of tequila

There are two basic categories of tequila: mixtos and 100% Agave. Mixtos use up to 49% of other sugars in the fermentation process, with Agave taking up the remainder. Agave sugar is fructose-based, and is easier for the human body to break down. Mixtos use both glucose and fructose sugars.
With 100% agave tequila, blanco or plata is harsher with the bold flavors of the distilled agave up front, while reposado and añejo are smoother, subtler, and more complex. As with other spirits that are aged in casks, tequila takes on the flavors of the wood, while the harshness of the alcohol mellows. The major flavor distinction with 100% agave tequila is the base ingredient, which is more vegetal than grain spirits (and often more complex).
Tequila is usually bottled in one of five categories:
  • blanco ("white") or plata ("silver") – white spirit, un-aged and bottled or stored immediately after distillation, or aged less than two months in oak barrels;
  • oro ("gold") – un-aged "blanco" tequila, blended with rested or aged tequilas, and often with caramel coloring, sugar-based syrup, glycerin, and/or oak extract added so as to resemble aged tequila;
  • reposado ("rested") – aged a minimum of two months, but less than a year in oak barrels;
  • añejo ("aged" or "vintage") – aged a minimum of one year, but less than 3 years in oak barrels;
  • extra añejo ("extra aged" or "ultra aged") – aged a minimum of three years in oak barrels. This category was established in March 2006.
It is a common misconception that some tequilas contain a 'worm' in the bottle. Only certain mezcals, usually from the state of Oaxaca, are ever sold con gusano, and that only began as a marketing gimmick in the 1940s. The worm is actually the larval form of the moth Hypopta agavis that lives on the agave plant. Finding one in the plant during processing indicates an infestation and, correspondingly, a lower quality product. (Note: for more information on how tequila is made, see mezcal.) However this misconception continues, and even with all the effort and marketing to represent tequila as a premium—similar to the way Cognac is viewed in relation to brandy—there are some opportunist producers for the shooters and fun market who blur these boundaries.

 Drinking Tequila

In Mexico, tequila is drunk straight, without salt and lime. It is popular in some regions to drink fine tequila with a side of sangrita—a sweet, sour and spicy drink typically made from orange juice, grenadine (or tomato juice) and hot chilies. Equal-sized shots of tequila and sangrita are sipped alternately, without salt or lime.
Outside Mexico, a single shot of tequila is often served with salt and a slice of lime. This is called "tequila cruda" and is sometimes referred to as "training wheels," "lick-sip-suck," or "lick-shoot-suck" (referring to the way in which the combination of ingredients is imbibed). The drinker moistens the back of their hand below the index finger (usually by licking) and pours on the salt. Then the salt is licked off the hand, tequila is drunk and the fruit slice is quickly bitten. It is common for groups of drinkers to do this simultaneously. Drinking tequila in this way is often erroneously called a Tequila Slammer, however this is a mixed tequila and carbonated drink. Though the traditional Mexican shot is straight tequila, lime is the fruit of choice when a chaser must be used. It is believed that the salt lessens the "burn" of the tequila and the sour fruit balances and enhances the flavor. In Germany and some other countries, tequila oro (gold) is often consumed with cinnamon before and slices of orange after, while tequila blanco (silver) is consumed with salt and lime. Finally, as with other popular liquors, there exist a number of shot-related drinking games and "stunt" drinks such as body shots and the tequila stuntman.
It should be noted that drinking higher-quality, 100% agave tequila with salt and lime is likely to remove much of the flavor.

Tequila Glasses

When served neat (without any additional ingredients), tequila is most often served in a narrow shot glass called a caballito ("Little Horse" in Spanish), but can often be found in anything from a snifter to a tumbler.
The Consejo Regulador del Tequila (Tequila Regulatory Council) approved an "official tequila glass" in 2002 called the Ouverture Tequila glass, made by Riedel.
The margarita glass, rimmed with salt, sugar, or plain, is a staple for the entire tequila/fruit mixed drink genre, including the margarita itself.

Other Drinks

There are an endless variety of drinks that involve tequila, relying only on the imagination of the preparer. As with most of the hard liquors, there is a martini variant that involves tequila as well as a large number of tequila drinks made by adding a fruit juice such as the Tequila Sunrise and Matador. Sodas and other carbonated drinks are a common mixer, as in the Tequila Slammer.

Popular culture

It is a common misconception that tequila is fermented from cactus. Agaves and cacti are both types of succulents, but are members of different botanical classes (Liliopsida and Cactaceae, respectively).
Tequila is a common topic of popular culture, ranging from films that simply use the name, such as Tequila Sunrise (1988) to songs about the drink. According to Tom Robbins's book Still Life with Woodpecker tequila is the preferred drink of outlaws. Sandra Lee of the Food Network refers to tequila as "her friend." In song, tequila is diversely portrayed, ranging from Jimmy Buffett's semi-serious Margaritaville to The Eagles' maudlin Tequila Sunrise. The track "Mexican Cousin," off Phish's Round Room pays tribute to the drink stating "Oh tequila, I turn to you like a long lost friend. I wanna kiss my Mexican Cousin once again" and continues to refer to the drink as the band's "Mexican Cousin". Tequila even enters the popular news media. For example, Mel Gibson's anti-Semitic outburst when arrested for drunk driving was attributed to tequila consumption. Sammy Hagar, rock star (singer of the bar anthem "Mas Tequila") and owner of Cabo Wabo Tequila described tequila's stigma as, "the stuff that you go, 'I will never drink that as long as I live,' and you have gotten sick in college on rot-gut tequila." This image of tequila as the instigator of particularly egregious intoxication and hangovers is pervasive in references to the drink in popular culture.
Additionally, singer-songwriter Alanis Morissette has penned an ode to tequila entitled "On The Tequila" for the Flavors of Entanglement sessions, and says tequila has helped her balance things out in her life.
Tequila plays a role in the climactic scene of "Funhouse", the season two finale of the HBO Original Series The Sopranos. In this episode, the character Sal "Big Pussy" Bonpensiero asks several members of the crew if there is any good tequila available, knowing that he is about to be killed and wanting a final drink with his longtime friends.
In the United States, National Tequila Day is July 24.
In the Mexican telenovela, Destilando Amor, the production of Tequila, and how it is made plays a role of the storyline. Part of the show takes place on Agave fields.
